AS A self-taught pizzaiolo, Tom immersed himself in HIS craft IN 2018,  studying ancient bread-making books and learning from the world’s leading pizzaioli OF OUR GENERATION.

What began as hours of dedicated research and study, soon became aN OBSESSION, MAKING AS MANY pilgrimageS to Italy whenever possible. where he met his idols and observed their skills, firsthand, in their pizzerias across Naples and the Casertana area of campania, italy.

HE DISCOVERED THAT the typical pizza style of the casertana area, was exactly what he was trying to replicate and master. 

SO the work began, creating a DOUGH with an airy crust, 

crisp on the outside, light on the inside, easily digested and easy to enjoy.​

DURING THE PANDEMIC, IN 2020, TOM'S MOTHER CATHERINE, HAD STARTED A FOODBANK DELIVERY SERVICE for FAMILIES HIT ON HARD TIMES.  tom was seeing progress in his pizza making and STARTED GIVING THEM AWAY as part of his mother's delivery service, IN RETURN FOR HONEST FEEDBACK. 

IT WAS WELL RECEIVED..... AND IT CONTINUED throughout the lockdown period and beyond, into A COLLECTION ONLY OFFERING ONCE A FORTNIGHT FROM THE FAMILY HOME!

 

TOM DECIDED ENOUGH WAS ENOUGH!! AFTER 5 YEARS OF MAKING PIZZA AT HOME, HE NEEDED TO CONTINUE HIS PASSION PROFESSIONALLY.

LEAVING BEHIND HIS CAREER IN TELECOMMUNICATIONS AND TAKING ON THE PHOENIX PUB KITCHEN RESIDENCY BACK IN MARCH '24, TO IMMERSE HIMSELF FULL TIME IN THE ART OF PIZZA!
